I know need to eat more fresh vegetables, but... I'm not overly fond of veggies at all, and prefer them cooked when I do eat them. Does anyone have a good recipe for a healthy, low-fat veggie dip that might make 'rabbit food' more appealing to me?

Have you tried tzatziki (sp?), a Greek dip?
Grate a 1-inch hunk of cucumber into a bowl, add 3/4 cup of plain
yogurt, a tsp of minced garlic, dash of pepper, then add 1/4 tsp of
sugar and add salt to taste...
It's also best to cover and refrigerate for a couple hours to let the flavors mingle.
This is my favorite veggie dip...
