Here's a recipe for my basic fruit Cheesecake

Crust:
about 1/3 lb graham crackers
2 tbsp brown sugar 
1/4 cup butter 
many dashes of cinnamon
many dashes of nutmeg

 
Filling:
16 oz. cream cheese, generic is fine
3 eggs with the white stringy yolk-tails removed
1/3 cup orange juice
1/2 to 3/4 can of sweetened condensed milk
 
Topping:
peeled orange slices, sliced strawberries or canned mandarin orange 
 
Crush graham crackers; mix with brown sugar, spices. Add to softened butter (soft but still thicker than sour cream). Mix with spoon until even. Press into bottom of 8-inch round nonstick pan, or 8x12 inch is probably okay too. refrigerate
 
In a blender, put in all ingredients IN THE ORDER THEY'RE LISTED (crucial). Blend until completely smooth. Pour into crust, bake for 40-50 minutes at 350

I think you can get away with using only the egg yolks for this recipe. It would probably result in a denser cheesecake, which is a really nice variation of this recipe.
