Cut lavender plant placed in water..will it sprout

So I have this huge out door lavender plant, but I want to i guess take some of it and plant it into a smaller planter and have it grow in my room.

If I cut the lavender and place it in water, will it spout like a normal house plant or die like normal flowers?

Or if I dig up a little bit of the root and plant it will that work?
